Good luck. Let us know if you can mirror one and extend two. I don't think you can. I think you can only extend them all or mirror them all. I think what you are talking about doing would be sweet though.

I am looking into a couple more options that can use 3 or 4 external monitors + the SP3. Theres a thread going on here about those options
