Ok Finally Think I've solved this....
After sitting and playing around with it for a few hours I noticed that randomly sometimes the connection would work perfectly...
When it did work I noticed that my monitor would stay on the desktop. When the connection was laggy and crappy the monitor went into sleep mode.
Yep seems pretty random....
I was poking around in the Splashtop settings on my desktop and found an option to install a driver to force the screen to blank.
After installing this - everytime I connect now seems to work!
So i'm guessing that once upon a time I may have installed this driver and somehow it's gone AWOL and causing Splashtop not to work properly...
