Anyone know how to get Windows Photo Viewer back as default or as even as an option to view images?

You've always been able to do this. Just click your heels together three times and say, "There's no viewer like 'Windows Photo Viewer'..."
Here's how to do it:
1) Right-click on a photo, Open With, Choose another app
2) Find Windows Photo Viewer near the bottom of the list. Choose 'Always use this ...'
Enjoy.
Note: The Windows Photo Viewer is not a standalone executable file, but instead, is one of many tasks relegated to rundll32.exe in your Windows System32 folder.
