Microsoft just updated the Surface Hub app which allows some customization on your Surface Pro 3 device. Previously, users were able to adjust Pen Pressure Sensitivity and Pen Top button configuration on their Surface device, but the new update also allows you to disable the Windows button.
This is handy because it can help you avoid the accidental activation while in the middle of using your tablet. This will be especially useful for for artists who needed a way to deactivate the Windows button while drawing on the surface of the Surface.
Here's the app on the Windows Store: http://apps.microsoft.com/windows/en-us/app/surface-hub/a0ccf2f2-defa-45b9-8a81-510b819333ef
